Boulder brewery looks to Summit County for new taproom

Upslope Brewing, which has risen to become one of the 10 largest beer makers in Colorado since its founding in 2008, plans to open a small taproom next month in Summit County.

The Upslope Apres Outpost will be located in the central area of the Bluebird Market, a two-and-a-half-year-old food hall in Silverthorne. It will have 10 beer taps, plus one for the company’s new line of hard yerba mate and several cocktails made with Upslope’s hard seltzer.

“It’s about time we did something like this,” said Upslope co-founder Matt Cutter. “We had been looking for years for the right concept in the mountains.”

Like many other Colorado breweries, Upslope, which has two locations in Boulder, has built its image around people drinking its canned beers and seltzers in the outdoors — camping, rafting, hiking. Every fall, for instance, it hosts an event called the Backcountry Tap Room, in which people can hike several miles to a makeshift taproom that the brewery sets up in the wilderness.

“We’re excited to have a physical presence in Summit, which has always inspired us,” Cutter said.

A new bar is being installed, and the tap area will open in time for a First Friday event on Aug. 2, but there are still some other small renovations and changes that will take place afterward.

Bluebird Market opened in January 2022 and has around 10 eating and drinking concepts, including the Mighty Colorado Burger, Lucky Bird and Lazo Empanadas, along with a coffee shop, ice cream parlor and deli. It also has indoor and outdoor seating and a playground.
