La Fillette Bakery reopens in larger space, adds brunch and booze

The restaurant: La Fillette Bakery, 6217 E. 14th Ave., Denver

About: La Fillette Bakery has reopened in a larger space in the Montclair neighborhood, less than two miles away from its previous location at 4416 E. 8th Ave., which it moved out of in February. Owner Keturah Fleming, who founded the French-inspired, from-scratch bakery in 2015, said she has been wanting to expand the business for the past couple of years so she could start a full-service brunch with booze. The business doubled its space from 1,000 to 2,400 square feet, adding a bar, a little patio and a bigger kitchen.

“We tried to stay as close as we could in the neighborhood and find an existing structure that we could make our own, give us more space and bring back seating,” Fleming said.

What’s on the menu: La Fillette’s pastry case is lined with seven varieties of fluffy croissants, like a savory roll with hatch green chile and cheddar cheese, and creamy pastries, including cream puffs, eclairs, crème brûlée, lemon bars and cupcakes. For brunch, the bakery has brought back its beloved build-your-own breakfast sandwiches, and of course, the “Croisomlette” smothered in hatch green chile and the “Ham & Cheese Scrambler.” Check out new additions for lunch like the banh mi sandwich with pork belly, duck or falafel or the classic Cuban sandwich. Fleming said she plans to add more brunch menu items over time.

“I’m excited to actually have people in the space to enjoy all the hard work we’ve done over the last year, especially in the last month and a half gearing up,” Fleming said. “It’s going to be cool to do more savory items with our pastries and actually serve people food on a plate to enjoy in our beautiful space now.”

Who’s cooking: Owner Keturah Fleming along with her team of bakers are responsible for the bread and pastries. Chef Jeremy Thomas, who previously worked at Le Grand Bistro & Oyster Bar, is handling brunch. He previously worked with Fleming in the restaurant industry, and the two have known each other for eight years. Fleming said they plan to collaborate on dishes using both the bread and new savory ingredients.

More: Eventually, La Fillette will add a happy hour service with small bites on the weekends and extend its hours. Fleming said she plans to create unique cocktails with pastry garnishes.

Opening date: March 30, 2023
