James Beard Award-winning chef opens restaurant at Denver airport

A signature Union Station restaurant, Mercantile Dining & Provision, has debuted its first outpost, located at Denver International Airport.

Mercantile opened on August 10 at the center of the A concourse, near Denver Chophouse.

The New American eatery is chef Alex Seidel’s second restaurant concept, following the success of his first, Fruition, in Denver. And it’s this concept that won Seidel the James Beard Foundation Award for Best Chef of America’s Southwest in 2018.

The format of both the original Union Station Mercantile and the new airport location includes a marketplace with grab-and-go items, a coffee bar and pastry counter and a sit-down restaurant serving farm-to-table plates alongside a curated list of wines, beers and cocktails.

Menu items range from a Dutch baby pancake for breakfast ($14.99) to a wagyu pastrami sandwich for lunch ($24.99) and pan-seared halibut for dinner ($32.99). Soups, salads, small plates and a handful of sandwiches and entrees are all available.

Flyers departing from the A gates will find Mercantile open from 5:30 a.m. to 11:30 p.m. daily, with breakfast served until 11 a.m.
