Carbon Café & Bar has fizzled out.
After nine years, the café, bar and part-time donut shop dubbed Habit Doughnut Dispensary, at 1553 Platte St., has permanently closed as of Monday, May 8.
“We have had a wonderful run on Platte Street with our co-branded Habit Doughnut Dispensary and Carbon Cafe & Bar,” owner Lisa Ruskaup said in a statement to the Denver Post. “We weathered all kinds of storms, development and changes in Denver. After COVID-19, and not receiving any Restaurant Relief Funds, we never really recovered. As such, we made the impossibly hard decision to close after nine years on Platte. We want to thank our team and regulars for all they’ve done to support HC over the years. We’ve run on fumes for as long as we can, but the headwinds of rising costs made it impossible for us to sustain the business any longer. ”
Ruskaup first opened Carbon and Habit as two separate businesses with a pass-through window and shared kitchen in 2015. But she later combined the two with a doorway, so customers could enjoy their CBD cold brew, Wake & Bake breakfast bowls, crispy tots, doughnuts injected with booze or even a morning cocktail in the edgy watering hole.
In 2018, Ruskaup opened a second location for Carbon and Habit next to Woods Boss Brewing at 2210 California St. in Five Points, which has since closed as well.
